Fazenda Cachoeira (waterfall farm) has been producing high quality coffee for generations, and is now run by Danilo Barbosa, the great-grandson of Elias, the farm's founder.
This coffee is grown in the specialty-producing region of Cerrado Mineiro, where humidity is low, temperatures are lighter, and the coffee quality is accentuated. Well defined seasons, and perfect coffee growing terroir, combine to produce this delicious yellow catuai variety, which is then naturally processed to retain some of the sweetness from the coffee cherry.
We roast this coffee fairly light to bring out the sweet chocolate and caramel notes, along with some citrus acidity, and a very good body. We had been looking for a high quality Brazilian for a while, this is it!
